’wichcraft is housed in a freestanding glass cube at the Alexandria Center for Life Science-NYC. ’wichcraft was founded by Tom Colicchio, with partners Sisha Ortuzar and Jeffrey Zurofsky in 2003. The three had a long history of working together in fine dining restaurants such as Manhattan’s top-rated Gramercy Tavern and Craft, but this collaboration was decidedly more casual. ’wichcraft prepares its food in their own kitchens, allowing them to hand pick each ingredient and ensure unparalleled quality. They slow roast, braise, and poach sandwich meats; whisk together their own aioli and vinaigrettes; and bake pastries and spin ice creams each morning. Whenever possible they work with small producers, use greenmarket vegetables, and serve sustainably raised meat. And when there’s a great local artisanal item that just can’t be improved upon, it very likely may end up on the menu. Breakfasts, coffee breaks, and sandwich lunches at Apella are catered by ’wichcraft.

Tom Colicchio made his New York cooking debut at such prominent restaurants as the Quilted Giraffe, Gotham Bar & Grill, Rakel, and Mondrian. He opened Gramercy Tavern with Danny Meyer in 1994, following that critical and popular success in 2001 with the equally well received Craft. Colicchio has expanded the Craft restaurant family to include Craftsteaks, Craftbars, and ’wichcraft sandwich shops* around the country, and he has recently opened Colicchio & Sons in New York. He is also the author of three cookbooks and the winner of four James Beard Foundation medals. Since 2006, he has appeared as the head judge on Bravo’s hit reality cooking series, Top Chef.
Sisha Ortúzar grew up in Santiago, Chile, and has been cooking in New York City since 1996. His collaboration with Tom Colicchio began in 1997 at the acclaimed Gramercy Tavern. When Tom moved on to found Craft, Sisha joined his team and played a critical role in the growth of the Craft Restaurant Group. In 2003, Sisha created the ’wichcraft concept and has since served as chef and creative director, building on his original vision of serving hand-crafted food in unexpected flavor combinations. He also co-authored the cookbook ’Craft a Sandwich into a Meal–And a Meal into a Sandwich. At Riverpark, Sisha combines his inventive and skillful treatment of high-quality market ingredients with New York City's international influences.
